Lemon Salmon NuWave Oven Recipe

Ingredients:

  • 4 fillets of salmon with thickness of 1 inch.
  • 2 tablespoons of lime juice
  • 1 tablespoon of olive oil
  • 1 tablespoon of lemon zest (grated)
  • 2 teaspoons of Dijon mustard and
  • 1/2 teaspoon of black pepper

For the Mango Salsa: 

  • 1 ripe mango, peeled
  • 2 green onions, diced and finely chopped
  • 1/4 cup of red bell pepper, chopped
  • 2 tablespoons of chopped fresh cilantro
  • 2 tablespoons of lime juice

Serving size: 4 Servings 

Directions: 

Whisk together the lime juice in a medium bowl along with olive oil, mustard, lemon zest, and pepper. Now place fish in a glass dish and pour the marinade evenly over fish.

Marinate and refrigerate for about 20 minutes. While the fish marinates, you can prepare the salsa.

Place the salmon on the 4 inch rack. Cook on a power level of HI’ for 6 minutes on each side. Now place the mango salsa over the salmon

Enjoy the meal hot.

Tips: While preparing the salsa, make sure you mix all the ingredients together in a bowl and if preferable, refrigerate it for 10 minutes until ready to serve.
